Their winemaking philosophy revolves around two principles: gentle handling of fruit and minimal intervention of wine. Culmina employ a combination of traditional practices and leading-edge technologies to preserve the beautiful, natural character of our wines.
At Culmina, all grapes are picked and sorted by hand, after which they are deposited into their Bucher Oscillys destemmer, the first of its kind in Canada, that facilitates gentle handling during crushing and destemming.
Next, the grapes are pressed using a basket press in order to avoid crushing the stems and seeds and thereby avoiding unwanted tannins and flavours going into the wine. Gravity is used to deliver the grape juice to the winery, where it is placed in stainless stell tanks with peristaltic pumps.
The operation is led by Jean-Marc Enixon is a classically trained French vigneron and winemaker. Jean-Marc completed a National Engineering Diploma in Agriculture at the prestigious Ecole Supérieure d’Agriculture de Purpan in Toulouse. There he focused on winemaking and viticulture, and spent an entire year researching the relationship between vine water stress and grape maturity. After completing his education, Jean-Marc gained international experience in Sonoma County, California and in the Gansu Province of China as a winemaking consultant. He then returned home to France, joining the Chateau Puy Guilhem in Saillans as Winemaking Director, where he spent 10 years leading the production of top-rated estate wines.
The land at Culmina Family Estate was carefully selected on the basis of temperature and soil pit analysis and mapping, which then were translated into micro block mapping into lots averaging 1.25 acres in size. The vineyards were selected with varietals in mind: their Arise Bench has similarities with some of the best sites in Bordeaux, while benches on two adjacent benches are ideal for white wines.
The land received extensive preparation before planting, including extensive aeriation and soil enrichment through the use of compost. There is also a sophisticated micro-irrigation system in place that allows for exceedingly precise control of soil moisture. There is extensive use of soil covers and vine planting approaches that maximize root system development.
